As the chef de cuisine at Seminole Hard Rock Hotel & Casino, Alberto Rodriguez-Pacheco was responsible for overseeing all culinary operations at the resort’s Plum Lounge, poker room, and highLimit Slots Rooms, where he crafts daily high-scale menus and specially themed events for all casinos VIP members and their guests.
Before joining the Seminole Hard Rock team, Chef Pacheco served as chef de cuisine for NYY Steak at Seminole Casino Coconut Creek where he created daily specials and menus for special events.During his time as chef de cuisine, NYY Steak was named Best North Broward Restaurant by SouthFlorida.com’s Best of South Florida.
Specializing in upscale dining, Rodriguez-Pacheco has worked in Puerto Rico, Nevis, and Saint Croix in positions from supervisor to executive chef at venues such as Copa Marina Beach Resort, La Cava, Aqua Pazza Ristorante, the Hilton Ponce Golf & Casino Resort, the Mount Nevis Hotel and the Renaissance St. Croix Carambola Beach Resort & Spa. Upon moving to the United States in 2011, he also served senior chef de cuisine for the Fontainebleau Miami Beach. As the chef of various restaurants like Don Lalo Restaurante Cubano in Franklin NC & Lydia’s Mexican Food in Clayton Georgia Rodriguez Pacheco has made it his mission to make sure to achieve the highest level of guest satisfaction creating food at the highest levels with simplicity & greatness.
